FIESTA SALAD – Barbara Evans (Stake R.S. Broadcast)

1 Red Pepper, diced                                                                      1 can Black Beans, rinsed and drained

1 Green Pepper, diced                                                                  2 or 3 Tomatoes, diced

¼ Purple Onion, diced                                                                   1 cup Cheese, grated

2 or 3 Avocados, diced                                                                  1 bunch of Red or Romaine Lettuce

1 10-oz. bag Frozen Corn, rinsed under warm water                    4 Chicken Breasts, cooked & shredded (see

Dressing:

¼ cup oil

¼ cup vinegar

1 pkg. Hidden Valley Dip Fiesta Ranch (can be found at Walmart)

                Mix together.  Combine salad and toss with dressing just before serving. 

                Serves 15 as a main dish.
