{"id":177,"date":"2013-03-24T19:48:00","date_gmt":"2013-03-24T19:48:00","guid":{"rendered":"\/post\/Ruths-Chicken-Moroccan-Stew.aspx"},"modified":"2013-03-24T19:48:00","modified_gmt":"2013-03-24T19:48:00","slug":"ruths-chicken-moroccan-stew","status":"publish","type":"post","link":"https:\/\/alpine9recipes.com\/?p=177","title":{"rendered":"Ruth&#8217;s Chicken Moroccan Stew"},"content":{"rendered":"<p>2 Tbsp. olive oil<\/p>\n<p>1 onion, chopped<\/p>\n<p>1 clove garlic, minced<\/p>\n<p>1\/2 tsp. salt<\/p>\n<p>1\/2 c. raisins<\/p>\n<p>2 c. diced peeled sweet potatoes or butternut squash<\/p>\n<p>1 c. sliced carrots<\/p>\n<p>1 can diced tomatoes, undrained<\/p>\n<p>1 3\/4 c. water<\/p>\n<p>1 box (10 oz.) plain couscous<\/p>\n<p>2 c. chopped cooked chicken or turkey (good for turkey left-overs)<\/p>\n<p>1\/4 c. shelled pistachio nuts<\/p>\n<p>2 tsp. cumin<\/p>\n<p>1 tsp. cinnamon<\/p>\n<p>1 1\/2 tsp. ginger<\/p>\n<p>Heat oil in large saucepan over medium heat. Add onion, garlic, sweet potatoes and carrots. Cook and stir 6 minutes or until onion softens. Stir in&nbsp;cumin, ginger, cinnamon and salt. Cook 1 minute more. Add tomatoes, raisins and water. Bring to a boil. Cover and reduce heat to low and simmer 25 minutes or until vegetables are tender.<\/p>\n<p>Prepare couscous according to package directions and keep hot. When vegetables are tender, add chicken to stew and heat 5 minutes more or until chicken is hot.
