{"id":903,"date":"2024-02-05T20:40:41","date_gmt":"2024-02-05T20:40:41","guid":{"rendered":"https:\/\/alpine9recipes.com\/?p=903"},"modified":"2024-02-05T20:48:30","modified_gmt":"2024-02-05T20:48:30","slug":"grilled-greek-chicken-kabobs-with-tzatziki","status":"publish","type":"post","link":"https:\/\/alpine9recipes.com\/?p=903","title":{"rendered":"Grilled Greek Chicken Kabobs with Tzatziki"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients:<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">for the marinade &amp; chicken:<\/h4>\n\n\n\n<ul>\n<li>2 pounds chicken breasts, cut into 1 inch cubes<\/li>\n\n\n\n<li>3 tablespoons olive oil<\/li>\n\n\n\n<li>2 tablespoons plain yogurt<\/li>\n\n\n\n<li>2 tablespoons red wine vinegar<\/li>\n\n\n\n<li>4 garlic cloves, minced or grated<\/li>\n\n\n\n<li>2 teaspoons dried oregano<\/li>\n\n\n\n<li>1 teaspoon mint (optional)<\/li>\n\n\n\n<li>salt &amp; pepper<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">for the tzatziki:<\/h4>\n\n\n\n<ul>\n<li>1\/2 cucumber<\/li>\n\n\n\n<li>1\/2 cup plain yogurt<\/li>\n\n\n\n<li>1 tablespoon lemon juice<\/li>\n\n\n\n<li>1 tablespoon olive oil<\/li>\n\n\n\n<li>1 teaspoon dill<\/li>\n\n\n\n<li>dash of garlic powder, pepper, &amp; salt<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol>\n<li>In a large bowl add olive oil, yogurt, vinegar, garlic, oregano, mint, and salt &amp; pepper to taste. Mix together to combine.<\/li>\n\n\n\n<li>Add chicken to marinade, toss to coat. Cover and place in the refrigerator for at least 2 hours or overnight.<\/li>\n\n\n\n<li>Make the tzatziki sauce. Peel the cucumber and use a spoon to scoop out all of the seeds. Finely dice the cucumber and add to a bowl. Add yogurt, lemon juice, olive oil, dill, and add a dash of garlic powder, salt, &amp; pepper. Mix until fully combined. Cover and refrigerate at least 20 minutes or overnight.<\/li>\n\n\n\n<li>Once the chicken is done marinading you will prepare the kabobs. Heat your grill to medium. You will need 6-7 skewers, metal or wooden*. Slide the pieces of chicken onto the skewers leaving at least an inch on each end.<\/li>\n\n\n\n<li>Once grill is to medium heat place the skewers down over direct heat. Grill 8-10 minutes. Flip the kabobs and grill an additional 8-10 minutes, until chicken is starting to golden and cooked all the way through.<\/li>\n\n\n\n<li>Serve the kabobs with the tzatziki sauce. My family loves to eat this meal in pitas along with lettuce, cherry tomatoes, red onions, and kalamata olives.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\">Notes<\/h3>\n\n\n\n<p>It is easiest to make the marinade and tzatziki sauce at the same time, whether it is overnight or 2 hours before eating.
