Mai Fun Salad – Debbie

 

Step 1-Salad dressing

Prepare before making salad so dressing is not hot when mixing ingredients together.

 

6 Tbls. Sugar

¼ Cup Oil-your preference

1 Tsp. lemon juice

2 Tsp. salt

¼ Tsp pepper

4 Tbls.white vinegar

 

Heat until blended then set aside. Before adding to salad be sure to shake well.

 

Step 2-Prepare Mai Fun Noodles

             Cook according to package directions in oil

 

For this recipe, use ½ package. We have purchased these noodles at Smiths or Albertsons.

Kids love to see these noodle sticks swell up and make funny shapes while cooking. When cooked they can be crunched up for the salad.

 

Step 3-Salad Prep

 

3 Chicken Breasts cooked and cubed

1 head of lettuce torn into bite sized pieces

1 small package of slivered almonds

A sprinkle of ground ginger (to your taste)

1 bunch of cut up green onions

1 cup of diced cucumbers

Mix together

 

Right before serving, add crumbled cooked noodles

 

Toss with prepared salad dressing and serve
