Becky’s Hearty Oatmeal Muffins – Cindy Leishman

1 1/2 cups pancake mix (I love Coach’s oats Multi-grain from Costco, but it seems to be a seasonal item, so I have used Krusteaz whole wheat mix too.)

1 c. uncooked oats

1/2 c. brown sugar

1 1/2 tsp. cinnamon

1 c. milk

1 egg

1/4 c. vegetable oil (I use olive oil)

1/2 c. peeled, chopped apples

1/2 c. chocolate chips (optional but yummy)

Heat oven to 425 degrees, Grease bottoms of muffin paper baking cups. Combine pancake mix, oats, brown sugar and cinnamon. Add remaining ungredients; mix just until dry ingredients are moistened. Fill muffin cups 3/4 full. Bake 15 to 20 minutes or til golden brown. Makes 1 dozen.
