Chicken w/Wild Rice Soup – Kitty Smith

1/2 c. butter

2 c. celery chopped

4 c. chicken broth

1 box Uncle Ben’s Wild Rice (original flavor -prepared)

1/2 c. flour

1 quart cream

1 small onion (chopped)

1/2 c. carrots chopped

3 cooked chicken breasts shredded

(I use a rotisserie chicken, easier and has more flavor)

Saute onions, carrots, and celery in butter. Add chicken broth. Add cooked rice. Add chicken. Add cream. Mix flour with a little broth in a small bowl. Add gradually to thicken soup.
