Fresh Pineapple Salsa

2 large tomatoes

2 medium-size ripe peaches, peeled, pitted and diced

½ cup finely chopped red onion

½ cup finely chopped red or green bell pepper

2 to 3 T. fresh limejuice

2 to 3 tsps. sugar

¼ tsp. salt

¼ cup lightly packed cilantro or Italian parsley leaves, chopped


Finely dice tomatoes. )Finely chop peaches and add them to the tomatoes. Stir the remaining ingredients into the salsa, adding the lesser amounts of lime juice and sugar at first. Wait a few minutes, then taste the salsa and add more if needed. Cover and refrigerate until serving time. Makes about 3 cups.
