Chocolate Zucchini Bread -Lynette Loveland

3 eggs                                                     1 c. sugar

1 c. brown sugar                                       1 c. salad oil

 

Beat together until well blended, then add:

1 tsp. vanilla                                            2 squares baking chocolate, melted

2 c. grated zucchini

 

Mix together and add:

2 c. flour                                                 ¼ tsp. baking powder

1 tsp. salt                                                1 tsp. soda

1 c. chopped nuts, optional

 

Mix well and pour into two greased large loaf pans or 6 small loaf pans.  Sprinkle chocolate chips over the top.  Make sure pans are greased well because the choc.  chips will settle to the bottom and tend to stick.  Bake at 375˚ for 50 min. for large loaves or about 40 min. for small.  Carefully remove from pans and let cool completely.
