Lime Snow Salad –Relief Society Bulletin

3 envelopes plain gelatin

½ c. hot water

¼ c. sugar

2 egg yolks

1-8oz pkg. cream cheese

8 1/2 oz. can pineapple slices

1-6 oz. can frozen limeade

1 cups ice cubes

1 cup heavy cream

 

Put gelatin and hot water in blender. Blend at high speed 40 seconds. Add sugar, egg yolks, cheese, 2 slices of pineapple in blender. Blend for 10 seconds. Add frozen limeade, and cream and blend only until mixed then add ice cubes one or 2 at a time quickly. Pour immediately into a jell-o ring mold. Let sit about 10 minutes and serve. Use pineapple slices as garnish (It is important to have all ingredients assembled before you start. This salad is ready to serve in 10 minutes).
