Visiting Teacher Mexican Meatball Soup

½ c. chopped onion

1 clove garlic

2 T. oil

1 T. chile powder

1 can tomatoes

2 quarts water

4 cubes beef bouillion

Saute onions and garlic in oil. Add chili powder and tomatoes, water, and beef flavoring. Bring to boil. Add 4 to 5 peeled, sliced carrots. Add meatballs while boiling. Cook 20-30 minutes.

Albondiguitas (Little Meatballs)

1 lb. hamburger

½ c. cooked rice

1 T. cornstarch

1/8 tsp. garlic powder

¼ tsp. oregano

1 tsp. salt

¼ tsp. pepper

1 egg, slightly beaten

¼ c. chopped chinese parsley

Mix thoroughly and shape into balls about the size of a walnut and drop into boiling broth.
