Ethel’s Sugar Cookies
Makes about 4 dozen cookies
¾ c. butter or margarine, softened
1 c. sugar
1 tsp. vanilla
2 eggs
2 ½ cups all-purpose flour
1 tsp. baking powder
½ tsp. salt
Decorator’s Frosting (below)
1. Beat butter, sugar, vanilla and eggs in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, baking powder and salt, using hands if necessary so dough holds together. Cover and refrigerate about 1 hour or until firm.
2. Heat oven to 375 degrees. Roll half of dough at a time 1/8 inch thick on lightly floured surface. Cut into desired shapes. Place about 2 inches apart on ungreased cookie sheet.
3. Bake 6 to 8 minutes or until very light brown. Remove from cookie sheet to wire rack. Frost with Decorator’s Frosting, and if desired, decorate with colored sugars and candies.
Decorator’s Frosting
3 cups powdered sugar
2 T. milk or half-and-half
½ tsp. vanilla
3 T. soft butter
Food color, if desired
Mix all ingredients until smooth and spreadable. Vary powder sugar to obtain desired consistency.
