Dried Cherry, Apple, and Pecan Salad with Maple Dressing
1/4 c mayonnaise
1/4 c pure maple syrup
3 T rice vinegar
2 tsp. sugar
1/2 c extra virgin olive oil
Salt and pepper to taste
1/8 tsp. crushed red pepper
Whisk mayo, syrup, vinegar and sugar in a medium bowl until blended. Whisk oil gradually until mixture thickens slightly. Add red pepper, salt and pepper. Store in fridge up to 3 days.
10 cups lightly packed baby greens
1/2 cup dried tart cherries, coarsely chopped
2 granny smith apples, cut in to matchstick size strips
1/2 pecans, toasted and chopped
1/2 cup grated sharp cheddar cheese
Toss teh salad greens, apples, dried cherries and 1/4 c of the pecans together in a large salad bowl. Add enough of th esalad dressing to coat. Sprinkle with the remaining 1/4 c pecans and cheese. Serves 6-8.
