Emma’s Favorite Soft Pretzels – Shirley Adolphson
4 tsp active dry yeast
1 tsp sugar
1 ¼ c. warm water (110 degrees)
In a small bowl dissolve yeast and sugar in warm water. Let stand for 10 minutes.
4-5 c. bread flour
½ c sugar
1 ½ tsp salt
1 T olive oil
In a large bowl, mix flour, sugar, and salt. Make a well and add oil and yeast mixture. Mix dough thoroughly. If dry add 1 T water. Knead 7-8 minutes. Oil a bowl, add dough, and turn to coat. Cover w/a warm towel and let rise until double. Turn dough onto floured surface. Divide into 12 pieces. Roll each piece into a rope and shape into a pretzel. Dip it into a solution of ¼ C baking soda and 2 Cups HOT water. Then place it on a greased baking sheet. Sprinkle with salt while wet. Bake 5 minutes ad 425 degrees, then rotate and bake 3-5 minutes more. While hot, brush with melted butter and sprinkle with coarse ground salt. Serve warm. They also freeze well. These are just as good as the ones in the mall, but lots cheaper!
