Sam’s Favorite Butter Chicken – Sarah Adolphson Andersen

Chicken breasts – cut into bite sized pieces

4 Tbsp Butter

1 C Cream

1 C Milk

10 Cashews (unsalted)  ground into a paste (I occasionally leave these out)

1 can tomato paste

2 tsp Garam Masala

1 tsp Indian red chili powder

½ tsp coriander powder

2-3 bay leaves

1 medium onion finely chopped

1 tsp ginger paste

1 tsp garlic paste

1 tsp green chili paste

Salt to taste

 

Heat 4 Tbsp butter.  Add bay leaves, ginger, garlic, & green chili paste and sauté.  Add chopped onion and fry until golden.  Add tomato, red chili powder, garam masala, coriander and salt.  Fry until oil separates from the paste.  Add cashews.  Then add milk and ½ c water to make a thick gravy.  Bring to a boil.  Then add chicken pieces.  Reduce heat and stir gently.  Add cream and simmer until chicken is done and gravy is thick.  Serve hot with rice.
