Fruit Punch Bars – Sarah Adolphson Andersen

Beat at high speed:

2 eggs                                                                                     

1 ½ cups sugar

1  17 oz. can fruit cocktail with juice

Add and beat at medium speed:

2 ¼ cups flour                                                                         

1 ½ tsp. soda

½ tsp. salt                                                                                            

1 tsp. vanilla

 

Place in a 10×15 greased and floured pan.  Sprinkle with 1 cup flaked coconut and ½ cup chopped nuts.  Bake at 350 degrees for 20-25 minutes.

While still hot drizzle with:

¾ cup sugar                                                                              ½ cup butter

¼ cup evaporated milk                                                              ½ tsp. vanilla

 

Boil the above for 2 minutes.  Remove from heat and add ½ cup chopped nuts.  Cool a few minutes before putting on the fruit punch bars.  **Note:  Start the drizzle about 10 minutes after putting the fruit punch bars in the oven.
