CRUNCHY CHICKEN SALAD – Chris Ball
Mayo and miracle whip for dressing
3 chicken breasts, cooked and cubed
3 sticks chopped celery
1 can pineapple tidbits, chilled
½ can Chinese noodles
6-8 oz. cashews
a sprinkle of onion powder
Marinate chicken in ½ mayo and ½ miracle whip for 2-4 hrs. Combine with
remaining ingredients at the last minute. Add more dressing if needed.
(Prepare ½ to 1 hr. ahead by stirring together everything except the Chinese noodles
which can be added in at the last minute.)
