WHOLE WHEAT WAFFLES – Jana Gunderson
1 cup sifted whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
2 tsp. sugar
2 eggs, separated
1-1/4 cups milk
1/4 cup oil
Separate eggs and beat whites until stiff. Sift dry ingredients. Add egg yolks and milk gradually beating with mixer on low. Add oil. Batter will be very thin. Beat hard for 2 minutes. Fold in beaten egg whites. Bake in waffle iron. You may add ½ tsp. soda and substitute buttermilk for milk to make a richer waffle.
