Chinese Chicken Salad (tangy, cold, and delicious) – Jana Gunderson

                   Salad                                                                                   Dressing

2 cups Chicken (cooked and diced)                                                2 T. Sugar

Lettuce (2 or more kinds, torn)                                                       1 tsp. Salt

2 or 3 stalks Celery (chopped)                                                        1 tsp. Accent

Green Onions (chopped)                                                                 ½ tsp. Pepper

Fresh Bean Sprouts and Pea Pods                                                   ¼ cup Vegetable Oil

2 T. Sliced Almonds                                                                       1 T. Sesame Oil

2 T. Sesame Seeds                                                                         3 T. Red Wine Vinegar

5 oz. can Crispy Chow Mein Noodles

Toast almonds in oven (400) for 5 min., then toss in large bowl with all the salad ingredients (except Chow Mein Noodles).

*Mix dressing ingredients in separate bowl.

*Just before serving, add dressing to salad and toss.  Chow Mein Noodles can be mixed in or sprinkled on top.
