Deluxe Blueberry Muffins

1 2/3 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground allspice

1 c Libby’s solid pack pumpkin

1/4 c undiluted evaporated milk

1/3 c shortening

1 c packed light brown sugar

1 egg 

1 c blueberries

1 T  flour

Streusel Topping recipe follows


In large bowl, combine 1 2/3 cups flour, baking soda, baking powder, salt, cinnamon, and allspice, set aside. In small bowl, blend pumpkin and evaporated milk. In large mixer bowl, cream shortening and sugar. Add egg; beat until fluffy. Alternately add flour and pumpkin mixtures to shortening mixtures; beat well after each addition. Combine blueberries and 1 T flour. Gently stir into batter. Spoon batter into 18 greased or paper-lined muffin cups, filling 3/4 full. Sprinkle streusel topping over muffins. Bake in preheated 350 oven for 35 to 40 minutes, or until toothpick comes out clean. Cool 3-4 minutes. Remove from pan; cool on wire rack.

Streusel Topping:

In small bowl, combine 2 T all-purpose flour, 2 T granulated sugar, and 1/4 tsp ground cinnamon. Using pastry blender or 2 knives, cut in 1 T butter until mixture is crumbly.
