Meat

1 1/2 lbs. Chicken breasts, boneless skinless

Produce

• 2 cups Bean sprouts

• 1/3 cup Cilantro

• 2 cloves Garlic

• 5 Green onions

• 1 1/2 cups Matchstick carrots

• 1/2 cup Peanuts, unsalted

• 1 Red bell pepper

Refrigerated

• 3 Eggs, large

Condiments

• 1 tbsp Fish sauce

• 1 tbsp Lime juice

• 1/4 cup Soy sauce

Pasta & Grains

• 10 oz Thai rice noodles

Baking & Spices

• 1/4 cup Brown sugar, packed dark

• 1 Red pepper flakes and sesame seeds

Oils & Vinegars

• 2 tbsp Rice vinegar

• 2 tbsp Vegetable oil

Soak noodles for 25 minutes. Cook chicken. Make sauce. Scramble eggs. Mix together. Top with peanuts, sprouts, lime wedge.
