Chicken Gyros and Tzatziki Sauce – Lizah Leishman
Ingredients:
4 chicken breasts, pounded to 1/2 in. thickness
1 T. Mediterranean seasoning (can sub Italian)
1 red pepper thinly sliced
1/2 red onion thinly sliced
4 pitas
lettuce
feta cheese
Tzatziki sauce:
2 c. plain Greek yogurt
4 tsp. minced garlic
1/2 English cucumber peeled and diced
1/3 c. chopped dill, fresh or frozen
1 1/2 T fresh squeezed lemon juice (1/2 med. lemon)
1/2 tsp. salt
1/8 tsp. black pepper
- Puree all sauce ingredients in a blender or food processor. (squeeze as much water out of the cucumber as possible before you puree the sauce.) Cover and chill.
- Season chicken breasts with Mediterranean seasoning. Cook in large skillet or pan over medium heat 5-6 minutes on each side until cooked through, cut into strips.
- Lay pita on a clean surface. Add lettuce, chicken, red pepper, onions. Top with tzatziki sauce and feta, fold pita.
