Chicken Gyros and Tzatziki Sauce – Lizah Leishman

Ingredients:

4 chicken breasts, pounded to 1/2 in. thickness

1 T. Mediterranean seasoning (can sub Italian)

1 red pepper thinly sliced

1/2 red onion thinly sliced

4 pitas 

lettuce

feta cheese

Tzatziki sauce:

2 c. plain Greek yogurt

4 tsp. minced garlic

1/2 English cucumber peeled and diced

1/3 c. chopped dill, fresh or frozen

1 1/2 T fresh squeezed lemon juice (1/2 med. lemon)

1/2 tsp. salt

1/8 tsp. black pepper

  1. Puree all sauce ingredients in a blender or food processor. (squeeze as much water out of the cucumber as possible before you puree the sauce.) Cover and chill.
  2. Season chicken breasts with Mediterranean seasoning. Cook in large skillet or pan over medium heat 5-6 minutes on each side until cooked through, cut into strips.
  3. Lay pita on a clean surface. Add lettuce, chicken, red pepper, onions. Top with tzatziki sauce and feta, fold pita.
