Honey Lime Chicken Enchiladas – AnneMarie
1 whole chicken shredded (like the rotisserie ones from Costco) (or 2-3 large chicken breasts)
Marinade for about 20 min with:
1/3 cup honey
¼ cup lime juice
1 TBSP chili powder
½ tsp garlic powder
I usually mix it around really well and then cover it with plastic wrap
Shredded Mexican Cheese
Tortillas
1 large can of Macayo’s green enchilada sauce (it tastes the best, but use whatever)
1 green pepper (optional)
1 red pepper (optional)
Corn (optional)
Black or Pinto Beans (optional)
Preheat oven to 350.
Spray the pans so the tortillas don’t stick to it, and then pour some enchilada sauce in the bottom of the pan.
Assemble the enchiladas with chicken and cheese, and whatever else you decide to fill them with.
Pour some more enchilada sauce on the top, making sure the tortillas all get some liquid on them.
Sprinkle cheese on top… as much as you prefer.
Bake uncovered for 30 minutes.
Turn off Bake, and turn on the Broiler for about 5 minutes or until the cheese is golden.
