BAKED TILAPIA WITH GARLIC-LIME BUTTER

4 Tilapia or Catfish Fillets         ½  tsp. chopped Cilantro

1 Lime                                        ½  Garlic Clove, minced

2 T. Butter                                 1 T. Olive Oil

 

Preheat oven to 375.

In a bowl, grate one tsp of lime zest.  Slice the lime in half and squeeze the juice from both halves into the bowl.  Add the butter, garlic, and cilantro.  Mix all together.  

Put olive oil in a cast iron skillet and spray with butter flavor cooking spray, then place tilapia in skillet.  Bake for 8 to 12 minutes._Remove from oven and spread butter mixture on each fillet.  Serve.____________
