ZUCCHINI BREAD (Delicious….Happy Fall!)
3 Eggs
1 tsp. Vanilla Extract
1 tsp. Nutmeg
½ cup chopped nuts (optional)
1 cup Vegetable Oil
2 to 3 cups grated Zucchini
¼ tsp. Baking Powder
2 cups Sugar
4 to 5 cups Flour
¼ tsp. Baking Soda
1/3 cup Molasses
4 tsp. Cinnamon
1 tsp. Salt
Beat eggs until foamy. Add next 4 ingredients; mix well. Add zucchini.
Sift all dry ingredients together, then add to mixture. Gradually add nuts. Pour into greased loaf pans.
Bake at 350 for 45 min., then at 325 for 30 min.
(Makes 2 large loaves)
