COLONIAL WILLIAMSBURG SWEET POTATOES (an instant favorite…delicious!!)

3 lbs. Sweet Potatoes                                          ½ tsp. Nutmeg

½ cup packed Light Brown Sugar                          ¼ tsp. Salt

3 T. Unsalted Butter                                           1 cup Milk or Half n’ Half

½ tsp. Cinnamon                                                   Freshly Ground Pepper to taste

*In large pot, cover sweet potatoes with cold water.  Add pinch of salt.  Bring to boil on high, then reduce to medium heat.  Cook until tender (about 45 min.).  Cool, peel and mash the cooked sweet potatoes.

Preheat oven to 400* and butter a 2-quart casserole dish.

*In large bowl, combine sugar (reserving 2 T. for the topping), butter, cinnamon, nutmeg, salt, and milk.  Stir in the mashed sweet potatoes, and season with additional salt/pepper.  Transfer to the casserole dish and sprinkle the remaining sugar on top.  Bake until potatoes are hot, and the sugar has melted and slightly caramelized (about 20-30 min.).
