DINNER IN A PUMPKIN (Spooktacular!!!)

1 Fresh Pumpkin  (8 to 12 inches in diameter) 

Cut circle on top around stem.  Remove top, and clean out  fiber and seeds from inside.

 

In large pot,  brown:

     2 lbs. Ground Beef                      1 Green Pepper (chopped)

     1 med. Onion (chopped)             1 ½  tsp. fresh minced Garlic

    

Add:    1 can Stewed Tomatoes                       1 ¼  tsp. Salt

             1 can Tomato Paste                            ¼  tsp. Pepper  (or to taste)

             2  (4 oz) cans Tomato Sauce               5  T. Butter                      

             1 can Corn (drained)                           1 can condensed Beef Broth      

             1 ½ cups INSTANT  Rice                      1 soup can full of  Water

             1 ½ cups frozen Green Beans

 

Bring mixture to a boil.  Cook for 2 min. 

Then fill cleaned out pumpkin with mixture.  Replace pumpkin top.

Place pumpkin in shallow, greased baking pan.

Bake at 350* for 1 ½  to 2 hours.  (Pumpkin should be tender, but firm so it won’t collapse).

Remove from oven, and take the lid off.  Sprinkle ½ cup grated Cheddar Cheese on top of mixture.  Return pumpkin to oven WITHOUT LID until cheese melts. 

Garnish with Parsley and Cherry Tomatoes  around base of pumpkin if desired.

 

(SCOOP OUT SOME OF THE COOKED PUMPKIN WITH EACH SERVING ….. YUMMY!)
