Spinach Salad with Lettuce

1 bag of baby sized spinach

¾ lb. Bacon

1 c. fresh mushrooms, sliced (optional)

1 c. cottage cheese

2 heads of lettuce

¾ lb. grated Swiss cheese

Craisins

1 small purple onion

Dressing:

¾ c. white vinegar

¾ c. sugar

1 ½ c. oil

1 ½ t. salt

¾ t. dry mustard

Mix in blender then add…

½ T. Poppy seeds

        Let purple onion soak in dressing to absorb flavor.  Make dressing ahead.
