Laurel Jones Whole Wheat Bread

Make a sponge of            6 c. hot water  

                                       6 c. whole wheat flour – hard red wheat freshly ground

                                       ½ c. gluten flour

Add instant potatoes:      1 c. boiling water mixed with ½ c. instant potatoes

Add:                                ¾ c. oil

                                       ¾ c. honey                                  

                                       2 T. salt

                                       1 tsp. sugar

                                       3 T. yeast dissolved in ½ c. water

Add:                                9 c. white bread flour.  Knead 15 min. Form into 6 loaves and

                                       let raise to top of pans.  Bake at 400˚ for 30 min.
