Bosch Whole Wheat Bread

6 c. warm water – not hot                                                   2½ T. yeast – Saf instant

whole wheat flour – hard white wheat –

start with 8 cups, 14-15 total

1 T. salt                                                                              ½ c. oil

½ c. honey                                                                          2 T. vital wheat gluten

2½ T. dough enhancer

 

Combine 8 c. freshly ground wheat flour and warm water.  Use dough hook to mix to paste consistency.  Mix in yeast, then salt, honey oil and gluten.  Turn machine to 1 and then to 2 as needed.  Add additional flour until dough pulls away from sides of bowl – not too much flour.  Let knead 7-8 mi. then add enhancer.  Knead 2 more min. – 10 min total.  Use shortening on your hands to form loaves.  Take dough immediately from bowl to fill bread pans one half to one third full.  Cover with plastic or saran wrap to keep moist, let raise until doubled.  Place in cold oven,then turn to 350˚ for 35-38 min.  Yield 4 2lb. loaves or 5 1½ lb loaves.
