Parmesan Chicken – Mary Ann Herbst

4-6 boneless, skinless chicken breasts, thawed

2 eggs

½ c. milk

1 pinch of salt

1 pinch of pepper

1½ c. grated parmesan cheese

 

Mix eggs, milk, salt and pepper.  Coat chicken breasts with egg mixture.

Cover with parmesan cheese (both sides).  Pat it to make the cheese stay on

the chicken.

 

Place in glass casserole dish sprayed with vegetable spray such as Pam.

Cover with aluminum foil.  Bake at 350° for 1 hr.  Uncover for the last

15 mi. to allow tops to brown.

 

Goes well with noodle dishes and a vegetable.

 

Add or subtract chicken breasts to accommodate number of servings needed.
