Zucchini Chocolate Cake – Relief Society Bulletin

½ c. butter, room temp.

½ c. buttermilk

¼ c. oil

1 ¾ c. sugar

2 eggs

1 tsp. vanilla

2 ½ cups flour (try 1 ½ cups wheat and 1 c.white)

4 T. cocoa

1 tsp. baking soda

½ tsp. cinnamon

½ tsp. salt

2 cups zucchini, peeled and shredded

1 to 2 cups chocolate chips

 

Preheat oven to 325 degrees. Mix together butter, buttermilk, oil, and sugar until smooth. Add eggs and vanilla and blend together. Mix in the dry ingredients and last, fold in zucchini. Pour in ungreased jelly roll pan and top with chocolate chips. Bake for 25 minutes. Let cool and dust with powdered sugar.
