Western Omelet Casserole – Relief Society Bulletin

Makes 10 servings. Ideal for slow cooker size 4 quart.

 

32 oz. bag frozen hash brown potatoes

8 oz. extra lean ham, cubed

1 medium onion, diced

1 ½ c. shredded cheddar cheese

12 eggs

1 c. milk

½ tsp. salt

1 tsp. pepper

Layer one third each of frozen potatoes, ham, onions and cheese in bottom of slow cooker. Repeat 3 times.

Beat together eggs, milk, salt and pepper. Pour over mixture in slow cooker.

Cover.  Cook on low 8-9 hours

Serve with orange juice and fresh fruit
