Black Beans with Quinoa – Lizah Leishman

1 tsp. vegetable oil

3 cloves garlic (I used jarred garlic)

3/4 c. uncooked quinoa

1 1/2 c. vegetable broth

1 tsp. cumin

1/4 tsp. cayenne pepper

salt and pepper to taste

1 c. canned corn (drained)

2 cans black beans, rinsed and drained

1/2 c. cilantro

Heat oil in a medium saucepan over medium heat. Stir in garlic and saute until lightly browned.

Mix in quinoa, vegetable broth, cumin, cayenne pepper, salt and pepper. Bring to a boil. Cover and reduce heat and simmer for 20 minutes. Once the quinoa is done, add corn and black beans. Simmer until heated through.
