Knott’s Fried Chicken – LaRae Whale

2-3 lbs chicken pieces

2 cups flour

1 quart (or enough to cover chicken)

 

Cover chicken with salted water. Soak for 45 minutes. Drain. Pat dry. Coat each piece of chicken with flour. Shake off excess. 

 

In a 81/2 quart sace pan, bring oil to a boil. Drop in chicken pieces (don’t overcrowd). Cover and fry for 45 minutes. Remove chicken with slotted spoon and drain on paper towels.

 

15 minutes before serving, heat ¼ c. oil in large skillet. Re-fry chicken for 3 minutes.
