Amish Potato Salad – Cindy Leishman

1 c. sugar

1 T. flour

1 tsp. salt

 

Mix, then add:

1 egg, unbeaten

3 tsp. prepared mustard

3 T. vinegar

1 c. water

Cook over medium heat until thick. Add 1 T. butter. When cold add 3 T. salad dressing.

Mix into:

8 medium-sized cooked potatoes

4 hard cooked eggs

1 medium-sized onion

1 c. celery, diced

1 ½ tsp. salt
