Blue Ribbon Mostly Butter Pie Crust – Cindy Leishman
For 1 double 9” crust or 2 single 9” crust pies
1 ¾ c. flour
10 T. butter, chilled
3 T. shortening, chilled
½ c. ice water
1 egg, beaten
Blend flour, butter, and shortening until mixture resembles coarse meal. Add a little water, and mix until dough just starts to come together. Gather into a ball and divide in half. Shape each half into a ball and flour lightly. Wrap in plastic. Freeze one ball if needed. Chill pastry you are using for 2 hours.
To bake before filling: Preheat oven to 425 degrees. Prick bottom of dough evenly. Cover dough with buttered foil and fill with beans or rice. Bake 15 minutes. Remove foil, brush with egg and bake 5 minutes more.
