Chicken Manicotti

1-2 lbs. chicken breasts cooked            24 oz. Cottage cheese

1 c. shredded mozzarella cheese           ½ c. parmesan cheese

1 egg                                                    2 Tbsp. Chopped parsley

½ tsp. Italian seasoning                        ¼ tsp. Garlic salt

¼ tsp. Onion salt                                   1 box of manicotti

1 jar spaghetti sauce

 

Making it Fresh:

Boil the manicotti noodles according to directions on the box. Mix everything together except the spaghetti sauce.  Stuff the manicotti after boiling it, then pour 1 cup of sauce on bottom of pan, and the rest on top of the manicotti.  Sprinkle with cheese.  Bake 25-30 min @ 375.

 

Making it to Freeze:

Mix together everything except for the spaghetti sauce. DO NOT cook the Manicotti noodles. (It absorbs enough moisture during freezing) Stuff the filling into the noodles. Pour 1 cup of sauce on bottom of pan, and the rest on top of the manicotti.  Sprinkle with cheese.  Freeze.

 

To Cook:

Pull out the day before and let thaw in fridge. If Thawed cook at 375 for 25-30 minutes

If still frozen in pan cook at 300 for 3 hours.
