SALLY’S PASTA CHICKEN SALAD – Sally Viehweg (fantastic!)

Salad Dressing  (In Shaker Bottle:)

4 cups (16 oz pkg) Penne Pasta (cooked)                                          

¼ cup White Vinegar

1 cup Cherry Tomatoes (quartered)                                                    

 3 T. Water

1 (4 oz. pkg.) Feta Cheese (crumbled)                                                  

1 (7 oz. pkg.) Good Seasons Italian Dressing Mix

1/3 cup Fresh Basil (cut into strips)                                                    

 COVER BOTTLE.  SHAKE WELL.  THEN ADD:

¼ cup Red Onion (chopped)                                                                

½ cup Olive Oil

¼ cup Sun Dried Tomatoes (chopped…NOT in oil)                          

  SHAKE AGAIN.

2 cups cooked Chicken Breasts (cut in bite-sized pieces)

 

Cook pasta in large pot.  Drain.  Add remaining salad ingredients and mixed dressing into same large pot.  Mix well. 

Fill serving bowl.  Refrigerate a few hours so flavors will intensify.
