Hamburger Lentil Soup – Cindy Leishman

 (This soup is wonderful for new mothers)

1 lb. ground beef

46 oz. tomato juice

4 c. hot water

2 c. lentils

1 c. diced carrots

1 c. diced celery

1 whole bay leaf

1 tsp. salt

½ tsp. salt

½ tsp. pepper

½ c. brown sugar

½ c. minced onion

 

Cook hamburger with ½ c. onion, salt, and pepper. Drain off fat. Add juice and water; bring to a boil, then add remaining ingredients. Reduce heat to slow simmer; cook 1 ½ to 2 hours

Can also cook in crock pot 6 to 8 hours (low).
