IRISH SODA BREAD – Claudia Borden
3 ½ c. flour 1 ½ c. raisins
2/3 c. sugar 2 eggs
1 tsp. salt 1 ½ c. buttermilk
1 tbs. baking powder 2 tbs. melted butter
1 tsp. soda
Grease and flour a cast iron skillet or dutch oven and preheat oven to 400 degrees.
Mix dry ingredients and raisins. Beat eggs with butter and buttermilk. Add to dry ingredients, mix and turn out onto a floured board. Knead lightly several times till smooth and put in pan. Brush top with more buttermilk and cut a cross into the top with a sharp knife. Bake 35 to 40 mins. Test center with pick. Cool about 5 mins. Then remove from pan.
