CHICKEN SALAD – Claudia Borden

Enough for a party or shower

7  large chicken breast pieces

½ bunch celery

½ dozen hard boiled eggs, shelled.

2 small cans chopped black olives

1 pt. (two cups) Miracle Whip

Gently boil the chicken breasts 15 mins. Drain, cool completely.  Cut into ½” dice.  Cut up celery into small dice also and chop eggs in a bowl using a pastry blender.  Toss these  ingredients together then gently fold in olives.  Mix in the Miracle Whip, cover and refrigerate till just before serving.  Nice on small rolls or croissants.
