PEACH COBBLER FOR TWO – Claudia Borden

For empty nesters and singles

1 regular size can sliced peaches             ½ cup Bisquick

1 tbs. cornstarch                                       1 tbs. sugar

1 tbs. sugar                                               11/2 tbs. melted butter

1/8 tsp. nutmeg and cinnamon                  2 tbs. milk

 

Combine in a small saucepan the cornstarch and some of the syrup

from the can of peaches till all the cornstarch is dissolved. Add the

rest of the peaches, the sugar and spices.  Bring to a boil while stir-

ing and  pour into a 1 quart baking dish.  Mix the Bisquick and the

other ingredients in a small bowl and turn out on a lightly floured

surface.  Pat into about the same size and shape of the baking dish,

lay on top of the peaches and sprinkle with sugar.  Bake 10 to 15

minutes at 375 degrees.
