BARBECUED SPARE RIBS – Chris Ball

Boil 3-4 lbs. spare ribs (I prefer boneless) in salted, peppered water with 1 tsp. onion

powder and 1 tblsp. worstershire sauce until tender – 45-50 min.  Drain, pat dry and

spread in a single layer on cookie sheet or dripper pan.  Coat with sauce, cover with foil and heat in oven 275 degrees for 1 ½ to 2 hrs.

Sauce:

1 c. brown sugar

cider vinegar

1 c. catsup

2 tsp. minced onion

1 tsp. chile powder

1 tsp. dry mustard

 

In a quart measuring cup pack brown sugar and add vinegar to return to 1 cup

level.  Add remaining ingredients.
