Pomengranate Salad- Ginger Leishman

Ingredients:

5 large pomegranates seeded

5 small fugi apples peeled and diced

1 15 oz. can crushed pineapple

1 large raspberry jello

2 c. boiling water

4 oz. softened cream cheese

8 oz. sour cream

6 oz. cool whip

Reserve 1 c. of pomegranates

Instructions:

  • Mix pomegranates, apples, and pineapple together.
  • Mix water and jello til dissolved and pour over the fruit mixture. Let it sit while blending cream cheese and sour cream together. Blend it well. Whip in the cool whip.
  • IN a 9X13 pan, pour half of the fruit and half of the jello liquid over it. Scoop cream filling evenly over the fruit and gently spread to cover the fruit. Pour the rest of the fruit on top followed by the rest of the jello liquid. Add remaining cup of pomegranates to top and cover and chill for 2 hours.
