Whole Wheat Bread – Suzanne Sidwell
Ingredients:
6 c. warm water
2/3 c. oil
2/3 c. honey
2 T. Kitchen Specialities Dough Enhancer
2 T. salt
2 T. Kitchen Specialities Vital Wheat Gluten
2 T. + 2 tsp. Instant Yeast ( you can mix yeast, water and honey until foamy, about 5 minutes, then add to other ingredients)
10-15 c. freshly milled whole wheat flour
(with 1/2 recipe add 2T. flax, with full recipe 5 heaping T. flax)
Instructions:
- Water, oil, honey and salt, Kitchen Specialties Dough Enhancer, Vital Wheat Gluten, yeast and 6 cups flour in mixing bowl. Turn the machine to speed 1, then on speed 2 and continue to add flour until the dough begins to pull away from the sides of the bowl (6-8) minutes.
- Put the dough into well greased pans immediately. Let the loaves rise until they are double in size.
- Bake in preheated oven at 350 degrees for 40-45 minutes until golden brown. Check at 20 minutes.
- Weigh dough 2 1/4 lb. loafs, 10 oz. for small loaves
