Sponge – Suzanne Sidwell
Ingredients:
3 c. warm water
2 T. instant yeast
2/3 c. honey
Mix quick, cover and let froth
Add:
2 T. Dough Enhancer
2 T. Gluten (vital wheat)
2 T. salt
1 c. ground oats
2/3 c. oil
4 T. flaxseed
12 c. wheat flour (start with less but 10-15 cups)
Add 3 c. to warm up
Mix until consistent -not too sticky- add flour if needed
