Amish Breakfast Casserole – Cindy Leishman

1 lb. bacon – diced

1 medium onion (chopped)

6 eggs – lightly beaten

2 cups shredded cheddar cheese (mild or medium)

4 cups shredded hash browns (thawed)

1 ½ cups small curd cottage cheese

1 ¼ cups shredded Swiss cheese

 

Cook bacon and onion together until crisp.  Combine with all other ingredients and put in 9×13 greased pan or glass casserole dish.  Bake at 350 for 35-40 minutes.  Let stand 10 minutes to set up.  Can make the day before.
