Café Rio Pork Barbacoa
5-6 lb. pork roast – Place roast in crock pot, season with salt.
Add: 2 c. brown sugar
1 cloves garlic, minced
sauce only from 7 oz. can chipotle chilies in adobo sauce
(rinse chilies with soda to get all the sauce into the pot)
¼ c. red taco sauce
1 tsp. dry mustard
2 ¼ c. coke (not diet)
Cook on low for 12 hrs. then place roast in large bowl. Discard all visible fat. Pull apart the meat until it is shredded. Place the meat back into the crock pot. Pour enough of the juices back onto the meat to cover. Cook on low for at least 1-2 hrs. more.
