Upside-down Salmon Filets – LaRae Whale

fresh salmon filets                                     fresh thyme

olive oil                                                       1 onion

Salt                                                             1 lemon

 

Slice filets into serving size portions.  Rinse with cold water.  Lay skin-side down on foil.  Rub olive oil on each.  Sprinkle each with salt, pepper, thyme.  Cut onion into thin slices; lay on fish.  Rub more olive oil on onion.  Squeeze juice of ½ lemon on top.  Cut other half of lemon into slices and place on to of onion.  Lay another

piece of foil over top.  Turn whole thing upside down into baking dish (skin will now be facing up).  Throw away original foil.  Bake uncovered at 350 ˚ for about 25 min.
