Lemon Tuna with Capers –Wilma Fountain
Cream Cheese Spread:
12 oz. cream cheese
Zest of one lemon
1-2 T. freshly squeezed lemon juice
1 T. freshly picked basil leaves, chopped
1 T. capers
Salt and pepper to taste.
Cream the above ingredients to a smooth consisitency
1 envelope (7.06 oz.) albacore tuna in water
1 T. mayo
2T. sour cream
1T. lemon juice
Mix the above ingredients. May be stored one to two days before using in finger sandwiches.
Fresh bread of your choice.Russian Rye is very good with this mixture. Remove crust from bread. Lay out two slices to form sandwiches. Spread cream cheese mixture on one side of sandwich. Spread tuna mixture on second piece of bread. Place bread with mixtures facing. Cut sandwich into ¼ size pieces.
